What can be fresher than fresh fish together with tropical fruits? The following recipe makes a healthy, juicy and tasty meal:
Cod with Citrus Fruits and Nuts (en Papillote)
Cook on grill or in oven. Serves 2
400 g (14 oz) cod fillets with the skin
2 sheets grease-proof paper
1 red grapefruit
10 pecan nuts
10 pistachio nuts
3 dl (1/2 pt 1 1/4 cup) fruit juice
Cut the rind from the fruit and detach the leaves. Place the fillets on a sheet of grease-proof paper and salt a little. Arrange some of the fruit neatly on the fillets and sprinkle the crushed nuts over it. Squeeze the juice from the rest of the fruit into a pot. Heat the juice and thicken with just a little cornflour. Put aside.
Fold the grease-proof paper tightly over the fish and tie if necessary. Bake on an outdoor grill or in an oven for about 8-10 minutes. Open the bag and sprinkle with the juice. Most enjoyable when eaten hot straight from the paper.
